“I wanted to figure out a way to give back but also start spreading awareness,” said Lekker Coffee co-owner Kara Finklestein of plans to donate 10 percent of profits to a rhino sanctuary.

“A lot of people aren’t aware that in addition to the customer paying a fee, the restaurant also pays a commission,” City Councilwoman Kendra Black said. 

“Our sales are at about 40 percent right now, and it’s been somewhat sustainable. But winter is coming,” said co-owner Niya Gingerich.

The buyer, who also owns a deli in a Boulder business park, said she and her daughters live in Denver and have been wanting to open a business here.

The company expects to open in Aurora, Lone Tree and Colorado Springs by the end of the year and it is planning locations in Denver, Castle Rock, Lakewood and Fort Collins.

The burger chain, which is trying to keep its identity under wraps as it expands into Colorado, is planning eight restaurants along the Front Range.

The Source Market Hall’s flagship restaurant is the latest victim of the pandemic. Gyu-Kaku Japanese BBQ, which has a restaurant near Union Station, will open a second location in 4,600 square feet at 100 Steele St.

The company, which has about 25 locations in Colorado and Wyoming, built a production facility in in Lincoln Park dubbed the “Red Square” that can be seen from Interstate 25.
